Louis XI fell in love with this delicacy after a hunting accident in the Vercors. He was offered a piece of this round cheese by two lumberjacks to cheer him up. Ever since then it has remained faithful to its local reputation and tradition. The Saint-Marcellin is made from cow's milk and delicately livens up the palate. It has recently been granted red label quality status (AOC).
